BBQ SMASH BURGERS

INGREDIENTS

    • 2 Racks of baby back pork ribs, trimmed
    • 2/3 cup apple juice
    • 1/3 cup yellow mustard
    • Lil Bubbies BBQ Rub
    • 1 stick unsalted butter
    • ½ cup brown sugar
    • Honey for drizzling
    • Lil Bubbies BBQ sauce
  • DIRECTION

    • Preheat griddle (or large cast iron) to medium heat. Cook bacon until crispy and move to a plate.
    • Sautee the onions in the bacon grease until soft and translucent. Remove and move to the side.
    • Roll beef into eight 3-ounce balls
    • Clean griddle top or cast iron and coat with canola oil, bring to medium/high heat.
    • Smash burger balls with back of a spatula and use parchment paper to reduce sticking. Season with salt and pepper to taste. Keep a close eye on these because they can overcook quickly.
    • Flip once crust has formed (1-1/2 minutes), mop with Lil Bubbies BBQ sauce, add onions, top with cheese. Remove once crust on the bottom has formed (should be done once you’ve topped all the burgers – remember to move fast!)
    • Remove from griddle. Toast burger buns and build burgers with the bacon slices, pickles, and abundant Lil bubbies BBQ sauce.
    • Serve immediately.
