BABY BACK RIBS

INGREDIENTS

    • 2 Racks of baby back pork ribs, trimmed
    • 2/3 cup apple juice
    • 1/3 cup yellow mustard
    • Lil Bubbies BBQ Rub
    • 1 stick unsalted butter
    • ½ cup brown sugar
    • Honey for drizzling
    • Lil Bubbies BBQ sauce
  • DIRECTION

    • Start the smoker and preheat to 200-225 degrees F.
    • Remove the silver skin from the back side of the ribs. Use a knife tip to lift the corner and then grab with a paper towel to help grip and pull the skin off.
    • Combine the mustard, ¼ cup of apple juice and spread thinly on the top and bottom of the ribs before lightly coating with Lil Bubbies BBQ rub.
    • Smoke ribs with meaty side up for 3 hours.
    • Lay out large sheets of aluminum foil on a nearby table and transfer the ribs, lightly “boating” the foil so it holds liquid.
    • Coat with brown sugar, drizzle with honey, add pats of butter evenly over the surface of the meat. Pour in the remaining apple juice.
    • Cover with foil and crimp edges to contain liquid and steam. Return to smoker for 2 hours.
    • Remove ribs from foil (careful about the steam!) and coat all sides of the ribs with Lil Bubbies BBQ sauce. Return to smoker for 45 minutes – 1 hr.
    • Remove and let rest for 10 minutes before serving.
